PRÉPARATION
- Rincer le saumon à l'eau froide et l'éponger avec du papier absorbant. Badigeonner la peau généreusement d'huile d'olive. Si le filet est sans peau, badigeonner un des côtés avec de l'huile d'olive.
- Saler et poivrer le saumon des deux côtés, puis le poser sur la planche, côté peau ou côté huilé en dessous.
- Préparer le gril pour une cuisson à chaleur indirecte et préchauffer à feu moyen vif. Combiner la mayonnaise, la moutarde, l'aneth et le zeste de citron. Fouetter pour mélanger, puis saler et poivrer au goût.
- Quand le gril est prêt, napper le filet de sauce et le placer sur la planche au centre de la grille chaude, loin de la chaleur. Fermer le couvercle et laisser cuire jusqu'à ce que le poisson soit prêt, de 20 à 30 min.
- Pour vérifier la cuisson, insérer un thermomètre à viande à lecture instantanée dans le côté du filet de poisson. La température interne devrait être d'environ 57 °C (135 °F). On peut aussi insérer une mince broche métallique dans le filet pendant 20 s; si elle en ressort très chaude, le poisson est cuit. Laisser le saumon sur la planche pour le servir.
