LES JURASSIENS INIMITABLES !

À l'aveugle, on le reconnaît d'entre tous. Il est typé et unique. Et pourtant, le vin du Jura demande qu'on le comprenne pour l'apprécier justement. À des millénaires du vin commercial (lire les gros jus sucrés vendus sous des étiquettes mode à la Crocodile Dundee), il en est un de traditions et bien ancré dans son terroir.

Les palais n'ont qu'à bien se tenir, les vins du Jura leur apporteront également un immense plaisir à table... Au Québec, la disponibilité est au compte-gouttes. Mais à voir la popularité de l'événement Passion Jura tenu à Montréal en juin, je parierais que cette région vinicole de la France aura toute la place qu'elle mérite dans nos succursales très bientôt. Véritablement marqués par le terroir et les pratiques œnologiques et culturales traditionnelles, les vins du Jura se déclinent comme ceci : quatre appellations géographiques, Arbois, Château-Chalon, L'Étoile et Côtes du Jura et deux AOC « produits », le Macvin du Jura et le Crémant du Jura. Ce département de la Franche-Comté, en France, propose une palette de vins diversifiés dans un tout autre registre d'arômes et de structure.

En Jura, les cépages sont le Pinot Noir (13 % de l'encépagement), le Trousseau (8 %), le Poulsard (14 %), le Chardonnay (42 %) et le Savagnin (23 %). La bande de terre longue de 80 kilomètres, le Révermont, à l'est de la Bourgogne, traverse le Jura. Au salon Passion Jura de Montréal le 17 juin, nous avions accès à 150 vins répartis entre 23 domaines jurassiens.

CRÉMANTS ESSAYÉS
Le vin effervescent du Jura, son Crémant, est élaboré selon la méthode traditionnelle et se décline en blanc ou en rosé, brut et demi-sec. Bien sûr, vous pouvez prendre l'apéro avec le Crémant. Sa vivacité allumera votre appétit avec des petits canapés style pâte feuilletée! Mais il fera un malheur avec certains desserts briochés aux fruits.

Mais quel Crémant! Je dois dire que le Jura sait y faire en Crémant, avec des prix qui confirment qu'aucune raison n'est valable pour ne pas l'essayer! LA MAGIE DU POULSARD

Ce cépage, le Poulsard, qui prend racine dans le Jura dès le 15e siècle, a généralement un profil robuste et beaucoup de finesse aromatique. Le Domaine de la Pinte, situé sur les terroirs certifiés en agriculture biologique d'Arbois et de Pupillin, offre des rouges à 100 % Poulsard. Des vins frais, à la tenue affirmée par ses tanins et une finesse aromatique indéniable. De floral, il pourra passer par des arômes de fruits rouges, d'épices et d'anis, se révélant sur chaque millésime avec la signature du terroir.

*Arbois est la première appellation française et sa naissance remonte à 1936. Du celte « ar » et « bos », Arbois signifie « terre fertile » et ses vins rouges en font la renommée.

CÔTÉ BLANCS

Du côté des blancs, ne vous étonnez pas d'entendre les dégustateurs demander « ouillé ou non? ». Les blancs du Jura, après une vinification traditionnelle, trouvent leur personnalité unique lors de l'étape de l'élevage. À ce stade, le vigneron peut soit ouiller, c'est-à-dire de remplir le fût au fur et à mesure que le vin s'évapore naturellement et ainsi éviter tout contact avec l'air et empêche l'oxydation. Sinon, il peut faire le choix de ne pas ouiller et ainsi obtenir ces arômes liés à l'oxydation, soit de noix et d'épices. Le Vin Jaune du Jura prend d'ailleurs son inimitable personnalité par ces arômes exceptionnels de noix, de fruits secs et d'épices, une palette aromatique hors du commun.
